    How should frozen meat be properly thawed?

          We will put the excess meat in the refrigerator and freeze it. When it is eaten, many people like to use thermal hydrolysis to freeze it. Is this method correct? How should the frozen meat be properly thawed?

          Many people have frozen meat in their refrigerators. However, defrosting is very knowledgeable. If the method is not correct, it will not only cause nutrient loss, but also cause microbial proliferation, leading to food safety problems.

          The worst way to freeze is to use hot water. The surface of the meat will heat up rapidly, freeze, and even change a little, and there is a large ice core in the middle. At this time, the heat transfer efficiency is the lowest, and it will not be able to be formed for a while, and for a long time, the microorganisms will proliferate in a large amount. At the same time, you will also find that the water of the meat has become turbid, which means that a lot of umami substances and B vitamins are dissolved inside. Measurements using chicken breasts have shown that this method loses a significant amount of soluble nitrogenous material, more than 5% of the total nitrogen content of the meat.

          Freezing with cold water is also not reassuring. Because of the long soaking time, cold water will also dissolve nitrogen and vitamins, but the amount of dissolution is less than that of hot water. Microbes still breed in the water, but the reproduction rate is slightly slower.

          The American Food and Beverage Association stipulates that only four methods of thawing can be used:
    1.Refrigeration room;
    2.Placed under cold running water (not with cold water);
    3.Microwave oven (cooked immediately after thawing);
    4.Cook directly with frozen meat.

          These four methods can only guarantee safety, but nutrients and flavors are not always well preserved.

          The most ideal method is to thaw in a cold room. The first night, the meat was placed in the lower part of the freezer compartment. Not only was the icing frozen evenly, but also no nutrient loss, it was also very safe, and it was also low-carbon and environmentally friendly. If you are in a hurry, you can also turn to the microwave oven. Select the "Thaw" file, set a shorter time, then change the direction of the frozen meat, and continue to increase the time. The goal of thawing is not to completely soften, but to remain partially frozen, but it has been able to be cut with a knife. At this time, it is easy to cut, does not breed microorganisms, and tastes good.

          I know how frozen meat should be properly thawed. If you are in a hurry, you can turn to the microwave oven. Select the "Thaw" file, set a short time first, then change the direction of the frozen meat, and continue to increase the time.
